ELLC's single malt is made from a combination of distilling yeasts and saison (beer) yeast with barley grown in Great Ryburgh in Norfolk. The is aged in a mix of small casks from Sonoma Distilling Co. (Bourbon and Rye) for 6-8 months and then transferred to larger casks that previously held Kentucky Bourbon, regenerated casks (re-charred casks given a new lease of life), some red wine casks from France and ELLC's very own London Rye casks.
