Cardhu (car-doo), translates from Gaelic to ‘Black Rock’, (yes, the inspiration behind the name of our whisky bar) and was officially established in 1824, when John and Helen Cumming applied for a licence for the Cardhu distillery, making it one of the first legal distilleries in Speyside. Historically it was a farming operation, that slowly turned into a purely whisky business, yet there are still hints of it’s past life, as the distillery is surrounded by farmland. Cardhu distillery is equipped with an eight ton stainless steel full lauter mash tun, which produces a clear wort (the sweet liquid derived from water & malted barley, then fermented for 75 hours). This leads to a green tasting spirit, and Cardhu’s signature ‘grassy’ style.
